Ingredients
4oz. Rainforest Seafoods Caribbean Snapper fillet [cut in ½ oz. portions]
1 tsp. Old Bay spice
¼ tsp. minced garlic
2 tsp. extra virgin olive oil
1 teaspoon fresh lime juice
1 tsp. fresh basil
2tbs. roasted tomato diced
1tsp. diced red onion
1tbs. crumbled feta cheese
2 slices National Healthy Start Bread
Directions
In a bowl combine 2 teaspoon olive oil, Old Bay seasoning and garlic. Place the fish in and toss allow it to sit for 30 minutes to absorb the flavor.
In another bowl combine the tomato, onion, ½ teaspoon fresh basil, lime juice, add salt and pepper to taste, here goes your salsa.
Place the pieces of fish on a non-stick grill pre-heated at 375 degrees f. allow 2 minutes per side, remove and hold.
Use a pastry brush and coat the bread on both sides with olive oil, place them on the grill and toast evenly on both sides.
Place the toast on a flat surface and cut into your desired shapes
Place the fish directly on top of each piece, next add the salsa and feta cheese
Garnish with chiffonade of basil.
