1 4oz. portion Rainforest Seafoods Mahi Mahi fillet (also known as dorado or dolphin fish)

1 teaspoon Old Bay seasoning

1 tsp. lime juice

½  cup pineapple juice

1 tsp. salted butter

1 clove garlic (minced)

1 sprig thyme

1 scotch bonnet (minced)


Place defrosted Rainforest Seafoods mahi fillets in a bowl and season with the Old Bay seasoning and minced garlic.

Use your fingers to massage them making sure they are coated evenly.

Grease and heat up your grill to 350 degrees then place the mahi fillet on, cook for 3 -4 mins.

Remove and place on baking tray.

In a sauce pan combine all the remaining ingredients and place on medium heat. Allow to come to a gently bubble, stirring occasionally. Allow it to reduce until it starts to thicken. Remove and pour over fish.
