1 pack of Rainforest Seafoods jumbo shrimp

1 can of coconut milk

1 large onion, sliced

6 cloves garlic, minced

3 stalks of scallion, chopped

1 large tomato, chopped

1 small green bell pepper, sliced

2 sprigs of thyme

2 tsp of Rainforest Seafoods Seafood Spice

1/4 small scotch bonnet pepper, deseeded and minced

1 tsp apple cider vinegar

Salt and pepper to taste


Add coconut milk to a pot on medium-high heat and bring to a boil.

Add the onion, garlic, tomato, scallion, bell pepper, scotch bonnet, thyme, and Seafood Spice to the pot and let this simmer for about 8-10 minutes.

Remove the tails from the shrimp and then add to the pot.

Lower the heat and simmer for a couple minutes until the shrimp have cooked through.

Serve with rice.
